Chef Marios Promotes Three Employees, Continuing Steady Growth
Raleigh, N.C. Chef Marios Inc has maintained a steady level of growth and is excited to announce the promotion of three employees within Chef Marios Inc. Apprentice, Joshua Nichols has been promoted to Advanced Apprentice (AA) and is taking on more of a leadership role within the company. Chef Marios Inc also recognizes acceptance of Marcus Vicens and Haydn Rowe into the Apprenticeship Program.
We believe in rewarding hard work with recognition of a job well done says Chef Mario Huante, Executive Chef and Owner of Chef Marios Inc. These guys have shown they have the passion and dedication necessary to make it happen in this industry and I am proud to assist them in gaining the knowledge and experience they need to take their culinary careers to the next level.
Chef Marios Inc began the Apprentice program in the spring of 2007 and it is the only known program of its kind in the area. The Apprentice program focuses on hands on training under the meticulous eye of Chef Mario and Darcy Brennan and focuses on the growth of the individual as well as symbiotic growth of the company. We believe employees are happiest when they feel they are continually learning and expanding their skill sets plus being able to apply them in a variety of ways says Chef Mario. Happy employees make for happy clients and the rest all falls in line he adds.

Chef Marios is the Only Food Service in the Triangle Ranked in Top 100 Small Businesses in North Carolina by Business Leader Media
Raleigh, N.C. Chef Marios Inc was ranked in the Top 100 Small Businesses in North Carolina by Business Leader Media. The awards ceremony took place June 17, 2009 at the Sheraton Hotel in Downtown Raleigh. Ranking and awards were based on percentage of business conducted in North Carolina, community involvement, number of employees and business revenues for the past 1 year and 5 years.
We cannot express what an honor it is to be in the Top 100! says Chef Mario Huante. To be recognized for my cooking is one thing, but to also be recognized for how we conduct our business just made this an experience we shall not soon forget. And to be the only food service company in the Triangle to be recognized
well, Darcy and I are just beside ourselves he added.

Here are the recipes we did for you guys live on site on November 13th! It was great to meet you all and if you have any questions, please just let us know!
Apple Slaw 8 servings
Dressing 1/2 cup cider vinegar 1/4 cup sugar 1 tablespoon of Dijon 1 teaspoon celery seed 3/4 cup light olive oil 1 teaspoon salt 1/2 teaspoon pepper
4 medium apples (your favorite) leave skin on then core and julienne -For best effect do different color apples 2 large carrots julienne 1 julienne red or yellow pepper 2 Scallions Sliced
In a large bowl add Vinegar, Sugar, Dijon, Celery seed; Whisk to mix. Add oil in a slow steady stream while you whisk dressing. Place apples into bowl with dressing. Mix as you go to coat apples so they dont turn brown. Add carrots and peppers stir to mix. Sprinkle with scallions to garnish

Red French Makes about 1 cup
Whisk Together 1/4C ketchup 1/4C honey 2T yellow onion, grated 2T apple cider vinegar 2T fresh lemon juice 2T vegetable or olive oil 2T water 2T tomato paste 1/2t celery seed Salt and Pepper to Taste
Whisk all ingredients together in a small bowl. Chill at least an hour before serving for flavors to develop. Keeps for about one week.

Chick Pea, Feta, and Tomato Salad 6 servings
4ea. Roma tomatoes (seeded and chopped) (3) 14oz. cans chickpeas (drained and rinsed) 1C Red onions diced fine 1C Olives (Rough chop)(black olives)
½ C balsamic dressing 1C feta cheese (crumbled)
In a large bowl combine tomatoes, chickpeas, red onions, and olives. Add balsamic dressing and toss. Fold in feta cheese.
Herbed Vinaigrette (Makes approx 2 cups)
1T fresh oregano, chopped fine 2T fresh basil, chopped fine 1t fresh Rosemary, chopped fine 2T fresh parsley, chopped fine 2T minced shallots 1t minced garlic 1T Dijon 1T sugar 1/2C red wine vinaigrette 3/4C olive oil
Combine all ingredients in a bowl, except the oil. Mix well. While whisking, add the oil in a slow steady stream (take your time or the dressing can break or separate). This will keep for about a week.

Chef Mario signs on to compete in the 2008 Great Chefs of the Triangle Competition
Come out and watch the magic! The Great Chefs of the Triangle Competition is to take place on Sunday, October 26, 2008 at the Prestonwood Country Club and will benefit the March of Dimes. Competing chefs will have an opportunity to win either People's Choice or Best Station Presentation and will feature original creations with a live and silent auction. Apprentice, Luke McMahon wins the Deviled Egg Competition held at Chef Mario's Inc! Competitions are a part of life around here and we LOVE to put our Apprentices feet to the fire and watch their creative wheels turn! This competition was based on a creative and innovative new spin on the traditional "Deviled Egg". This creation is the Sweet and Sour Dragon Egg! Check it out :)

Chef Mario Judges North Hills Iron Chef Competition Benefitting the Inter-Faith Food Shuttle
Raleigh, N.C. Chef Mario, owner and executive chef of Chef Marios, Inc, and local food and lifestyle writer Susan Ely will be the Midtown Magazine representatives on the panel of judges for the North Hills Iron Chef Competition was rescheduled due to Hurricane Hanna and is now taking place on September 20th at the North Hills Farmers Market from 9am-12pm. This event will benefit the Inter-Faith Food Shuttle and will mark the launch of a Food Drive.
We are thrilled that the competition is back on! says Chef Mario. This is going to be an event not to be missed. With three different dishes coming from each chef, the creativity alone will be a sight to see!
The North Hills Iron Chef Competition will promote the participating North Hills restaurants and North Hills Farmers Market and kick off the Farmer's Market as a drop off sight for the Food Drive. The event is open to the public and tasting tickets to sample the competition dishes will be available for $5.00. All proceeds from the ticket sales will benefit the Inter-Faith Food Shuttle and assist in alleviating hunger by developing systems to recover, prepare and distribute wholesome, perishable food for the areas poor, hungry, undernourished and homeless.

Chef Mario turns up heat in new kitchen A Triangle "personal chef" service is taking its commercial cooking operations to the next level. Chef Mario Inc., a personal cooking and catering service founded in Cary in 1998 by a graduate of the New England Culinary Institute, has shifted its operation to a larger facility in Raleigh that will allow the company to prepare catered meals for parties of 50 to 2,000. The 1,500-square-foot kitchen is located in the OCG Building at 2610 Wycliff Rd., Suite 23. The new kitchen location also puts Chef Mario Inc. in charge of the Wycliff Cafe, a small grill located inside the building and open to the public.

Our Last Round with the Kids Cafe in 2006!
We've been a long time supporter of the NC Food Bank and this year, we've worked in conjunction with them to provide the Kids Cafe Chef's Apprenctice Program. Once a month, we brought a fantastic group of kids into the kitchen to show them what it's like to be a Chef! They learned everything from making their own pizza dough, salad dressings and marinara from scratch, and even got to experiment with some knife skills! The kids we got to play with this year were from 6th-9th grade and we were blown away with their eagerness to learn and cooking skills!

Chef Mario's Expands into Raleigh Commercial Kitchen!
As of May 1st, 2005 we moved into our beautiful commercial kitchen in the lower level of the OCG office building in Raleigh, where we continue to take care of clients new and old as well as run the Wycliff Cafe located in the building. This cafe is open to the public and located at 2610 Wycliff Road, off Lake Boone Trail, just minutes from the Belt Line. Please come and visit us there!
About the To-Go café: We are not the traditional café- were 100 times better! Instead of waiting in a long line to get food that has been sitting under a heat lamp or in a steam pan for hours or racing back to your office and having a soggy room temperature lunch, you get your meals prepared fresh and packaged in convenient To-Go containers so you can just pop them in the microwave and PRESTO! Lunch is served! You can enjoy your meal on your time, whenever you want it. And youll have the satisfaction of knowing what youre putting into your body is prepared fresh and made with your health in mind!
We revolve the menu around what's happening in our kitchen, so you can be sure anything on our menu is made fresh and is of the highest quality. The best selection is usually on Wednesday's and Thursday's because we have just finished all the meals for our Personal Chef Clients and are more likely to have a variety those days. Monday's and Tuesday's we will offer fresh sandwiches, fruit and various other items. Remember, even a turkey sandwich from Chef Mario's is going to be Real Thanksgiving Style Roasted Turkey! The cafe is closed on Friday's so that we can concentrate on our Catering Client. Please visit the home page for a link to the latest menu!
